guests from Chicago this past weekend. Tell us what you think!
Ingredients
15oz frozen shredded hash browns
1 cup shredded cheddar cheese
1 tablespoon olive oil
8 medium size eggs
salt & pepper to taste
2 slices cooked bacon crumbled (we used a thick cut maple variety with a couple of extra slices on the side)
½ tablespoon parsley (we substituted cilantro)
8 slices of avocado for garnish on the plate
Instructions
Preheat oven to 425 degrees, butter or grease muffin tin (we used a large 4-compartment muffin tin)
Mix hash browns, salt, pepper olive oil and cheddar cheese in a bowl
Grease the muffin tin, divide mixture into four parts and use your fingers to pack tightly into muffin cups to form nests
Bake for 15 minutes or until edges turn brown and cheese is melted
Crack two med eggs into each nest and season w/ salt & pepper
Top each w/ crumbled bacon 1 tbsp cheddar cheese and cilantro
Turn oven temp down to 325 degrees
Bake until egg whites set (approx. 13 – 16 minutes)
Let cool, gently slide knife around edges to loosen and remove from pan
Garnish w/ avocado slices
